What is Peruvian pisco?

Peruvian pisco is a distilled grape brandy original from Peru. It is made with grapes from the coastal valleys of the country (Lima, Ica, Arequipa, Moquegua and Tacna) and has a minimum of 36% alcohol. Another interesting fact about pisco, the bottles must be packed in the country in order for it to be considered 100% authentic.

In addition, pure pisco distillate has been proudly recognized once again at the Virtus International Awards 2022 in Lisbon, Portugal, as one of the highest quality, traditional and flavorful spirits drinks. In this international event, the Pisco of Peru was awarded with about 33 gold and silver medals.

Some of its most popular presentations are: pisco Quebranta, pisco Italia, pisco Acholado and pisco mosto verde. Let’s look at each of them in detail.

Types of pisco

To produce pisco, the Denomination of Origin only allows eight varieties of strains:

Pure pisco is made with: Pisco grapes Negra Criolla, Mollar, Quebranta, Uvina, Italia, Torontel, Moscatel and Albilla. All pure piscos must include on the label the variety of raw material with which they are made.

Quebranta Pisco:

Quebranta is a type of pisco, a grape distillate original from Peru. Quebranta, on the other hand, is made from 100% pure Quebranta grapes, which are grown in the Ica Valley of Peru. This valley is located in the south of Peru and is known for its desert climate; suitable for cultivation. The Quebranta grape is a resistant variety that can withstand harsh environmental conditions, making it ideal for distillation.

For this reason, Quebranta pisco has a light, bright color and a bold, fruity flavor with hints of green apple and grapefruit. It is usually bottled at 40% alcohol by volume (ABV) and is often enjoyed neat or in cocktails such as “the pisco sour” or the different flavors of chilcano de pisco.

Thanks to its distinctive aroma, Pisco Quebranta is one of the most popular types of pisco among bartenders and cocktail enthusiasts. This variety is made from black or purple grapes that have been crushed and then fermented. Quebrantas are typically aged for about six months before being distilled, giving them a mild aroma.

Mosto verde Pisco:

You may be familiar with mosto verde pisco from its use in the popular Peruvian cocktail, the “Pisco Sour.” But what exactly is mosto verde pisco and how is it made?

Mosto verde pisco is the name of the production of distilled grape juice. Pisco grapes are usually of the Quebranta variety, known for its high acidity. After the process, the distillation is fermented for at least two years in oak barrels or “botijas”.

The resulting distillate has a light, fruity flavor with hints of a floral aroma. It is usually bottled at 40% alcohol volume. Also, if you want to try the mosto verde pisco, be sure to consult the Pisco Sour recipe. This refreshing cocktail is perfect to enjoy on all kinds of occasions.

 

Italia Grape Pisco

They have a sweet, musky flavor and are often used to make dessert wines. The Italia grape is also grown in Peru and Chile, where it is used to make the Brandy of the same name.

Peruvian pisco with Italian grapes is a delicious and refreshing combination. Pisco is distilled from fermented grape juice, and Italian grapes add juicy sweetness to the mix. Traditionally, pisco is made from Peruvian red grapes, but the Italian variety can also be used. Pisco has a strong alcohol content, so it is important to serve it in small glasses. Acholado Pisco:

Pisco acholado is the most common type of pisco and is used in a wide variety of cocktails, such as the popular Pisco Sour. If you are looking for a versatile spirit that can be used in both mixed drinks and shots, Pisco Acholado is a good choice.
